Salad in a Jar

I absolutely love this idea I found a couple of days ago and I've started bringing them to work. It is such a great idea I don't see why no one thought of it before. You know how you've always tried bringing salad to work and it gets all soggy or if you put them in plastic bags the vege gets all squisshy? Well the nice people from Well Vegan shared this idea with us, Salad in a Jar! Apparently if it's stacked correctly these salads can last up to 4 days.

So here's the order of salad stacking from bottom up:

1. Dressing
2. Hearty items: tomatoes, beans, onions, carrots
3. Then lighter bits: quinoa, sunflower seeds, mushrooms
4. Lettuce or spinach

Just don't get crazy on the way into work and forget you have a GLASS jar in your bag — i.e. no breakdancing or skateboarding. When you're ready to eat, just shake them around and you've got yourself a tossed salad.
